Unlike stone pizza ovens where food and fire are on the same level, this oven features two chambers to separate the burner box from the cooking area, and a firebrick liner on which pizza and cooking pans are able to be placed directly for baking. A hollow wall on both sides of the oven allows smoke to travel from the fire chamber up and down onto the food, transmitting a rich, smoky flavor.
